Yes, winter has arrived, bringing with it longer nights when all we want to do is cosy up around the fire. In Scandinavia, people love getting together with friends and family over a glass of Glögg, their traditional mulled wine. Løv Organic has taken the iconic Glögg recipe and given it a twist to create a deliciously spicy infusion.

1 x 75cl bottle of red wine
15cl of Løvely Glögg syrup
25cl of iced Løvely Glögg
2 slices of lemon
First prepare a Løvely Glögg syrup: put 50cl of sugar cane syrup into a saucepan with 3 teaspoons of Løvely Glögg. Bring to the boil and simmer for 3 to 4 minutes then filter. To make the cocktail, pour the syrup, some chilled Løvely Glögg (make a warm infusion and then add ice cubes), a bottle of red wine and 2 slices of lemon into a saucepan. Bring to the boil and simmer for 15 mins. Pour into some pretty glasses and add a slice of lemon.
¼ of a lemon or lime
1.5cl Løvely Glögg syrup
6cl iced Løvely Glögg
2cl blackcurrant nectar
To make a chilled cocktail, crush the lemon or lime
and place all the ingredients into the shaker.
Shake well and pour into pretty coupe glasses!
6cl red grape juice
1.5cl lemon juice
2cl sparkling water
1.5cl Løvely Glögg syrup
This is another cold cocktail. To make, simply add all the ingredients
to the shaker except the sparkling water.
Pour the mixture into a glass and add the sparkling water (2cl).

Mix all the dry ingredients together in a large bowl. Add the egg yolks. Whisk in the buttermilk (by hand). Beat the egg whites till stiff then fold into the mix. Pour the mixture into an æbleskiver pan (a special pan with indentations). Turn each æbleskive once it is golden.
Put the icing sugar and ground almonds into a large bowl and mix. Pour in the water or very strong Løvely Glögg mixing with a spatula and then your hands. Form the Marcipan into a ball and wrap in cling film. Rest in the fridge for a good hour. For variety you can add hazelnut nougat, ginger paste or orange confit paste. Prepare these 'additions' while the Marcipan is resting and then work together and create 2cm cubes. These are even more delicious when topped with melted chocolate or a whole almond.
